Akesato Ito Dairy Farm in eastern Hokkaido runs a popular beef restaurant, ATTOKO, specializing in a delectable type of wagyu from grass-fed Japanese Shorthorn cows. Most parts of the cattle are used to minimize wastage, while there’s an equal emphasis on using pasteurized milk from the animals and sourcing all other products locally. The menu is centered around Japanese Shorthorn wagyu, including beef stew slowly simmered in Tokachi red wine; Japanese-style beef curry; sizzling sirloin steak; and the highly-recommended beef escalope, a low-fat beef cutlet placed on rice and topped with demi-glacé sauce. For coffee-lovers, artisanal coffees made with ground beans from around the world are also available, as are several flavors of soft-serve ice cream.
