A new brewery that started brewing Japanese sake in February 2021. The brewery was created by Tomihara Liquor Store, a liquor store in Nanae Town with over 100 years of history. Their chief brewer is Hiroki Higashiya, who has been involved in sake brewing for over 30 years, and who served as chief brewer for Kunimare Sake Brewery in Mashike Town. They use the Kitashizuku brand of brewer’s rice, cultivated by contract farmers in southern Hokkaido Prefecture, along with high-quality groundwater from Mt. Yokotsu, to make the sake. They produce a variety of Japanese sake, such as the light, sweet Gohhou.
