Hakodate Wine: Local Wine for Local Tastes

The Hakodate Winery, which makes genuine but casual wine, aims to produce wine for Japanese tastes. The Shibare Wine series, made using the shibarezukuri technique that involves freezing grapes to condense their sweetness, has been highly reputed at wine competitions all over the country. The Budokan Honten, the shop connected to the winery, sells no less than 70 varieties of wine at any time. Visitors to the shop are allowed to taste several of the wines on display completely free of charge.
